Alu (Colocasia) Vadi

Ahh, Alu Vadi (also called Patra in Gujarat, Pathrode in Karnataka, Patra vadi in Konkan) is a delicious traditional snack made from Colocasia (taro) leaves smeared with a spiced gram flour paste, rolled, steamed, and then shallow-fried. It’s tangy, spicy, and slightly sweet – a real treat in Maharashtrian and Konkani homes.
Ingredients:
4-5 Colocasia leaves
Green chutney (shredded coconut, coriander leaves, green chili, ginger & garlic)
1 cup gram flour (besan)
¼ cup tamarind jaggery pulp
¼ cup rice flour
Salt (as per taste)
1 tbsp white sesame seeds
2 tbsp oil
1 tsp coriander cumin seeds powder
2 tsp red chili powder
1 tsp turmeric
½ tsp asafoetida powder
Steps:
Prepare the leaves: Cut the stems of the colocasia leaves and flatten them using a roller.
Make the batter: In a bowl, mix together all the ingredients. Gradually add water as needed to create a smooth batter.
Assemble the rolls: Take 4-5 prepared leaves and spread the batter evenly on each leaf. Place alternate leaves in opposite directions and continue layering with batter.
Roll the leaves: Carefully roll the stacked leaves into tight cylinders.
Steam the rolls: Place the rolls in a pre-heated steamer and steam cook for 20 minutes.
Slice the rolls: Once cooked, cut the rolls into slices.
Fry the slices: Heat oil in a pan. Optionally, add cumin and mustard seeds. Place the slices in the pan and cook until golden brown, turning them over to cook evenly.
Serve: Once the slices are cooked, remove them from the pan and serve hot.
