Egg & Sausages Noodles

Egg & Sausages Noodles is a quick, Indo-Chinese style comfort meal – perfect for a busy evening or even a filling breakfast-for-dinner. It combines noodles stir-fried with scrambled eggs, sliced sausages, veggies, and sauces for that street-style smoky flavor.

Ingredients:
  • Hakka Noodles (1 packet)

  • Oil (4 tbsp)

  • Sausages (1 Cup chopped - try best sausages from Monsa Foods)

  • Whole Eggs (2)

  • Ginger & garlic (2 tsp Chopped)

  • Green Chilli (2 chopped)

  • Onion (1 chopped)

  • Carrot (1 chopped)

  • Green, red, yellow Bell Pepper (1 Cup chopped)

  • Schezwan Sauce (1 tbsp)

  • Soya sauce (2 tbsp)

  • Chilli sauce (1 tbsp)

  • Salt (as per taste)

Steps:
  • Boil the noodles for 5–6 minutes with 1 teaspoon of oil and salt.

  • Drain the water, add 1 cup of cold water, and drizzle 1 teaspoon of oil.

  • Fry the chopped sausages until golden brown.

  • Fry 2 eggs and scramble them.

  • In a separate pan, add 1 tablespoon of oil, chopped ginger, garlic, green chili, and onion and fry until golden brown.

  • Add chopped bell pepper and carrot and mix well until cooked.

  • Add the fried sausages, 1 tablespoon of schezwan sauce, 2 tablespoons of soya sauce, 1 tablespoon of chili sauce, and salt to taste.

  • Mix well and add the boiled noodles.

  • Cook for 2 minutes and add the scrambled egg.
