Mixed Dal Tadka

Mixed Dal Tadka (मिक्स डाळ तडका) is a hearty, protein-rich comfort dish where 2–3 dals are cooked together, tempered (tadka) with ghee, garlic, and spices, and served hot with rice or roti. Unlike plain toor dal or moong dal, this mix has more depth, creaminess, and layers of flavor.

Ingredients:
  • Mixed dals (green & yellow moong dal, urad dal, toor dal, chana dal masoor dal - each 1/4th cup)

  • Oil (2 tbsp)

  • Hing / asafoetida (1 tsp)

  • Rai / mustard seeds (1 tsp)

  • Jeera / cumin seeds (1tsp)

  • Curry leaves (8 to 10)

  • Green chilli (1 - as per your spicy)

  • Garlic (7 to 8)

  • Onion (1 big)

  • Tomato (1 big)

  • Turmeric (1 tsp)

  • Coriander and cumin Powder (2 tsp)

  • Sambar masala (1 tbsp)

  • Jaggery (1 tbsp - optional)

  • Kokum (2)

  • Coriander leaves

  • Salt (as per taste)

Steps:
  • Gather the mixed dals: green and yellow moong dal, urad dal, toor dal, chana dal, and masoor dal. Wash them thoroughly and soak in water for 15 minutes. Soaking helps the dals cook faster and more evenly.

  • Heat 2 tablespoons of oil in a preheated cooker pan. Add the following ingredients:

    • 1 teaspoon of hing (asafoetida)

    • 1 teaspoon of rai (mustard seeds)

    • 1 teaspoon of jeera (cumin seeds)

    • 8 to 10 curry leaves

    • 1 green chili, chopped

    • Chopped garlic

    • 1 medium-sized onion, chopped

  • Mix well and cook until the onion turns golden brown. This step is important for developing the base Flavors of the dal.

  • Add chopped tomatoes and mix well. Cook until the tomatoes are softened and cooked through.

  • Then, add the following spices:

    • 1 teaspoon of turmeric powder

    • 2 teaspoons of coriander and cumin powder

    • 1 tablespoon of sambar masala

    • Salt to taste

  • Mix well to ensure the spices are evenly distributed.

  • Add the soaked mixed dal to the pan and mix well. Add water if needed to achieve the desired consistency. You can also add jaggery for a touch of sweetness (optional).

  • Give it a quick mix. Add kokum (a souring agent) and let it come to a boil.

  • Cover the cooker pan and pressure cook for 4 to 5 whistles. This will ensure the dals are fully cooked and tender.

  • Now, prepare the tadka (tempering). Heat 1 tablespoon of oil in a small kadai or pan. Once the oil is hot, add:

    • 2 teaspoons of mustard and cumin seeds

    • 5 to 7 curry leaves

    • 2 round red chilies

    • Red chili powder

  • Mix well and let the spices sizzle.

  • Pour the prepared tadka over the cooked dal. Garnish with fresh coriander leaves.
