Ripe Mango Muramba

Ripe Mango Muramba (आंबा मुरांबा) is a traditional sweet preserve made with ripe mangoes and sugar, cooked gently till glossy and jam-like. It’s mildly spiced with cardamom or saffron and has a golden, jewel-like appearance. Served as a side with chapati, puri, or even just eaten like a sweet pickle.
Ingredients:
Ripe mangoes (firm variety, like Rajapuri/Kesar) – 3 medium
Sugar – equal weight to mango pulp/pieces (approx. 2–2.5 cups)
Cardamom powder – ½ tsp
Saffron strands – 6–8 (optional, soaked in warm milk)
Nutmeg – a pinch (optional, for festive touch)
Steps:
First, add the sugar and mango paste to a pan and mix until the sugar melts.
Next, add the mango pieces and cook for 10 minutes.
After the mixture boils, cook for an additional 2 minutes.
Then, add the nutmeg and cardamom powder and mix.
The final step is to transfer the muramba to a flat bowl to cool down and then store it in a glass container in the refrigerator.
